Let’s all pretend for a moment that we actually need a day dedicated to cheesecake. It’s not as though we love it every day of the year, right? Cheesecake is a classic comfort food that feels like a warm hug, to be honest. It’s just too bad that it’s something you always have to head out to order. Sure, there are plenty of cheesecake recipes online. But have you ever come across one that actually sounds easily doable? We’ve put together this easy no-bake cheesecake recipe that will only actually take 15 minutes to work on (6 hours altogether, but don’t let that scare you away- you’ll spend 5 hours and 45 minutes relaxing and waiting!). Nothing fancy, nothing complicated. Just a simple and short recipe that’ll give you delectable tarty and creamy results!
Ingredients
Base:
- 8 oz of Graham Crackers or Biscoff.
- 2 ounces of melted unsalted butter
- Salt- to taste
Filling:
- 16 oz of plain cream cheese
- 3/4 cups of sugar
- 4 1/2 TSP of fresh lemon juice
- 1/4 TSP of vanilla extract
- 1/8 TSP table salt
- 1 1/2 cups of heavy cream
- 2 cups of fresh fruit for topping!
Method:
- Begin by mixing the melted butter into the graham cracker/biscoff crumbs in a small bowl. Stir in salt to taste. Evenly spread the mixture into a 9-inch pie pan/plate. Compress the spread mixture using any cup you have lying around. This is going to push the crumbs into any cracks or crevices of the plate. Pop in the fridge until you need it again. This step can even be done a day or two in advance!
- Grab your mixer and throw in the cream cheese, sugar, lemon juice, vanilla, and salt. Mix at a low speed until a thicker paste is formed then you can take it up to medium speed to get it extra smooth. Switch to a whisk attachment and slowly pour in the heavy cream while mixing at low speed. After a minute or so, increase the speed to high and whip until the mixture is stiffer.
- Spoon the mixture into your refrigerated crust and spread as evenly as possible. You can use your spoon to create patterns on the top if you plan to serve it without any fruit! Cover your creation with clingfilm and refrigerate it for about 5 hours
- Lastly, chop up your fresh fruit of choice and decorate it on the top of the cake or just place them in a bowl on the side to be added to every slice- and you are done!
