Ramadan is upon us, a month of steadfast prayer and fasting. Another thing that comes with the Holy Month is preparing Suhoor for friends and family. We have easy to make recipes that will make day-to-day preparations quick and enjoyable. Read on for healthy, delicious recipes to try.

Spinach Feta Cheese Wrap

What you need: 

  • 1 [7-inch] of tortilla
  • 1/4 cup of sliced mushrooms
  • 1/4 teaspoon of black pepper
  • 2 cups of spinach
  • 1 large egg and 1 egg white, lightly whisked
  • 2 tablespoons of feta cheese
  • 1 tablespoon of sun-dried tomatoes, chopped

Procedure:

  • Heat the tortilla in a microwave on high, for one minute.
  • Spray a cooking spray on a small skillet and sauté the mushrooms and paper on a medium heat for two minutes.
  • Add spinach and sauté for one to two minutes until soft.
  • Add in the eggs and stir often for two minutes until they are ready.
  • Take it off the skillet and place the egg scramble in the tortilla. Sprinkle feta cheese and tomatoes.

Breakfast Quinoa

What you need:

  • 2/3 cupof quinoa, rinsed
  • 1 cupof coconut milk
  • 1/4 tspground cinnamon
  • toppings of your choice (nuts, dried/fresh fruit, coconut milk, chocolate chips)
  • 2 tspof vanilla extract
  • pinch of ground nutmeg

Procedure:

  1. Put all the ingredients above in a saucepan over medium heat.
  2. Cook for 15-20 minutes until the quinoa has absorbed all excess liquid.
  3. Top with your favorite toppings.

Green Smoothie

What you need:

  • 1 ripe banana, frozen
  • 1/2 cup of chopped mango, frozen
  • 1-2 large handfuls of baby spinach
  • 1 cup of unsweetened almond milk
  • 1/4 cup of pumpkin seeds
  • optional: 1/2 scoop of vanilla protein powder + 1/4 cup of water

Procedure:

  • In a blender, put the spinach, mango, banana and pumpkin seeds. Pour the almond milk on top.
  • Blend until smooth and creamy for two minutes.
  • Enjoy

Watermelon Smoothie

What You Need:

  • 1½ cups of Watermelon (seedless or remove seeds)
  • 1 frozen banana
  • 1 apple, peeled and cored
  • Agave or honey
  • ¾ cup fat free Thick Greek Yogurt

Procedure:

  • In a blender, add the watermelon and blend.
  • Strain with a mesh sieve into a bowl and add it back to the blender.
  • Add the other ingredients and blend. Finnish off with Agave or honey and serve.
