Busy days can prevent us from eating a well-prepared meal or even a meal in general. But with these easy to make recipes, you can enjoy a good food without ruining your schedule. All you need is a microwave.

 

Breakfast Potatoes

Servings: 2

Ingredients

  • 1/8 teaspoon of pepper
  • 1/4 teaspoon of garlic
  • 1/4 cup of shredded cheddar cheese
  • 2 peeled and sliced medium potatoes
  • 1/4 cup of sliced onion
  • 1/4 teaspoon salt

Preparations

  • Spray cooking spray on a large microwave safe plate and arrange the sliced potatoes and onions. Season lightly with salt and paper. Cover Coat a 9-in. microwave-safe plate with cooking spray. Arrange potato and onion slices on plate; sprinkle with seasonings. Cover the top and place in the microwave on high to cook for 9- 10 minutes until potatoes are done. Make sure to add the cheese at the last 30 seconds.

 

Microwaved Parmesan Chicken

Servings: 2

Ingredients

  • 2 boneless and skinless chicken breast halves
  • 4 teaspoons of soy sauce
  • 1 teaspoon of butter
  • 1/4 teaspoon of garlic
  • 1/8 teaspoon of pepper
  • 1/4 cup of shredded Parmesan cheese

Preparations

  • On a microwave safe dish, top chicken with garlic, soy sauce and pepper; sprinkle cheese and dot with butter. Cover the top and cook on high for 4-5 minutes. Serve.

 

Fruit & Granola Crisp with Yogurt

Servings: 4

Ingredients

  • 3 cups of fresh or frozen sliced peaches, thawed
  • 1 cup of fresh or frozen blueberries, thawed
  • 2 cups of low-fat frozen yogurt
  • 4 tablespoons of hot caramel
  • 4 tablespoons of granola without raisins

Preparations

  • Divide the peaches and blueberries among four bowls and top them with granola and hot caramel. Leave the top open and microwave for 1-2 minutes till bubbles appear. Serve with a scoop of frozen yoghurt.

 

Minted Beet Salad

Servings: 2

Ingredients

  • 5 medium fresh beets
  • 2 tablespoons water
  • 1/4 teaspoon of pepper
  • 1/4 cup of pitted olives, quartered
  • 2 tablespoons of sliced fresh mint
  • 2 tablespoons champagne vinegar or rice vinegar
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of salt

Preparations

  • Wash the beets and trim the edges. Place them on a microwave safe dish, drizzle water and proceed to microwave them on high for 14-15 minutes with the top covered. Make sure to turn them in between and remove when done.
  • Cool the beets for easy peeling and cut them in to even, square pieces. Whisk the vinegar, salt, pepper and oil together until thoroughly mixed and add olives, the beets and some of the mint, coating them generously. Cover and refrigerate for at least an hour and garnish with the mint left.
