Mother’s Day never tasted so good – particularly when you have some inspired recipes to serve your lady of the hour on her upcoming special day.Granny Mouse Country House & Spa executive culinary artist Wayland Green says every year it is customary to celebrate Mother’s Day by giving gifts that include chocolates and sweet-things that usually contain unhealthy ingredients; but 2018 has already seen more people starting to take control of their health and choosing to eat healthier.

“Healthy food, in general, has seen a surge in popularity. There are many elements to this, such as the nutrient content of food, how its are grown, and the health benefits of specific foods,” says Green.

This year, why not spoil mom by giving her a break from the kitchen and cook her a carb-conscious meal that is sure to be a treat in itself?

If your mom is vegetarian, there are a number of alternatives that can be substituted to make this extra special for her, he said.

“Fibre helps keep blood sugar balanced by slowing down the absorption of sugar from carbohydrates. Brown rice and whole-grain couscous retain the natural fibre from the bran.

“With 3.5 grams of fibre in a one-cup serving, brown rice has almost six times more fibre than white rice. The same portion of whole-grain couscous has eight grams of fibre, compared to 2 grams in regular,” says Green.

He suggests you try this simple steak and broccoli stir-fry dish, which is quick and easy to cook, and instead of breakfast in bed, serve mom a healthy lunch you can enjoy together.
